Here's what you'll need for this simple Pineapple Chicken recipe, found in the Dinner in a Jiffy (5 ingredients of less) chapter on page 73:
The recipe calls for 6 skinless, boneless chicken breasts, but I went ahead and used a big bag of frozen chicken breast strips that I bought on sale (saved me some cutting for the kids when it was time to eat, too!). Place your chicken in the slow cooker, then season with salt, pepper & paprika. Yes, I keep my salt & pepper (and cinnamon, baking powder, baking soda, corn starch, etc.) in canning jars in my cupboard. I can see what's what and how much of any one thing I have at a glance, plus, since the jars are more uniform in size, they fit in the cupboard easier. And, some of those boxes don't seal worth a flip, so to me, this makes sense.
Next, mix together a 20 oz. can of pineapple tidbits (drained) with 2 tablespoons of dijon mustard. I used pineapple chunks because they were already in my pantry and it turned out fine. Then, I made a little punch with the pineapple juice I drained off.
Here it is spread over the chicken in my crock pot:
Cook on high for 3-4 hours. Here's what it looks like when it's done:
I served it over rice with some other veggies. Definitely a fun way to spice up some chicken!
