Double Chocolate Chip Cookie Dough Cupcakes

See that Hershey bar in my header? It symbolizes my addiction to chocolate. Chocolate makes just about everything better!

Then I was blog hopping the other day and saw some fabulous looking Chocolate Chip Cookie Dough Cupcakes over at Sugar and Spice Mommy. Hers looked super festive and super-yum. So, being a chocaholic, I decided to take my own version for a test drive. Here's what you need:

Mix up your cupcake batter. Anyone can follow the directions on the box, so I'll leave you to that part on your own. Then fill your cupcake pan as directed:
Yep, the kids helped fill them. Yep, they made a mess. And yep, I left it just like that for baking without cleaning it up. That's what dishwashers are for.

So anyway, then, just stick a hunk of cookie dough all the way down in each cupcake. Sugar & Spice Mommy says if you don't stick them down in good, the cookie dough will come out the top of your cupcake. I heeded her warning and didn't have any problems.
Bake as directed. Now I used mini chocolate chip cookies instead of normal size. I though the size of cookie in the cupcake was great...plus it gave me a hunk of leftover cookie dough to bake another night since I just put one piece of dough in each cupcake. My package had 40 mini cookie chunks and I made 23 cupcakes from my mix.
Here they are nice and warm from the oven.
Let them cool completely, then frost.

  2. I make something very similar but with brownies and then I push the cookie dough down in. I call the "cronkies" since it's a brownie cookie mix. They are downright sinful to eat!!!

  6. Um, has no one told you about WHIPPED icing. These are so being stolen and having whipped icing put on them. Well, if the whipped icing makes it that far:)
