Freezing me a little summer love

I love me some strawberries.
Not long ago I shared with you my Granny's (Not So) Secret Freezer Jam recipe. Then I show edyou what else I made with this lovely batch of strawberries: Chocolate Strawberry Angel Food Cake.

I also wanted to freeze me some strawberry goodness to enjoy later in the year. I'm a sugar addict who is also lazy. So I opted for a dry sugar pack when freezing these lovely bites of summer. I started by slicing them all up. Already they are looking yummy. Now how simple is this? Just toss in 1/2 cup of sugar per quart of berries. Now I might have added a smidge more...just promise not to tell.
Give it a good stir and you're all set to freeze. Now I skimp on a lot of things: generic cereal, aluminum foil, storage bags, etc. But freezer bags are no place to skimp. Invest in some good quality ones. Nothing is worse than spending the time to freeze something and ending up with freezer-burned nastiness.
If you talk sweet and give it a little shake, the bag will even be kind enough to stand up all by itself for you so you can finish filling it with relative ease. Once filled, lay it down flat to remove any excess air (again, this helps keep the freezer-burn nasties away).
And have I mentioned I hate freezer burn? So I always double bag...just to be on the safe side. :)
So that's my easy-peasy simple solution to savoring sweet strawberries throughout the year. Can't remember those simple steps? I've even written it down for you!

  2. mmmm...great idea! Now, if I could actually get an raspberries all the way inside, I could freeze some, too! But we seem to eat them as fast as we pick 'em!
