If you happened to read my post yesterday, you'll know I had a long weekend. I was seriously dragging yesterday. Nothing helps a person recuperate from a serious case of the "I feel like my butt has just been kicked"s than chocolate, right? Since I knew I had most of a bag of Heath toffee pieces left from when they served as pretend "dirt" on my Boot-Scootin' Cookies, I knew just what kind of therapy I needed: Gooey Cake. It's super easy and sinfully rich and packed with enough sugar to wake up even someone as old and tired as myself!
You start by baking a cake. Just follow the directions on the box. Pretty much anyone can do that without my help, so I won't elaborate. I recommend chocolate. I used Devil's food because it was what I had on hand. German chocolate, milk chocolate, double-fudge...anything goes. The more chocolate the better. But that's kind of my whole philosophy on life, too.
Once your cake is baked, use the end of a wooden spoon to poke holes in the cake. Don't wait for the cake to cool; these next steps work best while the cake is still nice and warm. Now's where it starts to get good:
Pour an entire can of sweetened condensed milk across top, letting it work its way down into all of those holes. It will start to absorb into the cake while it's hanging out in the holes. And it will look like this:
Now's when it gets even better:
Do the same thing with an entire jar of ice cream topping. I used Smucker's...cause with a name like Smucker's, it has to be good! No, seriously, Smuckers is headquarters just up the road in Orrville, Ohio. Love their Simply Smucker's retail store and love supporting our local economy.
You can use whatever kind of ice cream topping you want: hot fudge, butterscotch, caramel, Milky Way...you name it, it works. I chose caramel because, well...caramel is just plain yummy. Almost as yummy as chocolate, but not quite. Together they make near heavenly perfection.
Now is the time to let you cake cool the rest of the way and let all that yumminess be absorbed into the cake. When it's cool, toss some Cool Whip on top. I used chocolate Cool Whip, but plain, low-fat or fat-free would work, too. But who are you seriously kidding? This is not a low-fat or no-fat dessert. We went for chocolate because that's what the Old Man picked up when I sent him on a last-minute ingredient run. I knew there was a reason I married that man.
Now top it with your Heath bar toffee bits. I only put the Heath bits on about 2/3 of my cake...because my mom was coming to eat with us. She is fighting the good fight with colon cancer and recently has an colostomy. Toffee bits are not exactly a good idea for folks with a colostomy. Kind of like the yummy raspberries from my Double-Yummy for the Tummy Brownie Pizza. We made adaptions and it all works.
So there ya go! I don't recommend having this dessert too often, but the next time you need some chocolate-caramel therapy or enough sugar to boost your butt up off the couch, this one works wonders. :)








OMG! My mom makes this cake all the time, but not with all these incredibly blissful toppings! I am going to have to whip this one up for the family soon. Can you tell that my diet is going to heck in a hand basket?????? Sigh.....
