Confession: Sometimes I get so sick of my kids whining/complaining about what's for dinner that I want to scream and run away. For a seriously long time. That includes both the screaming and the running away. When I know I can't take it anymore, I resort to pizza. I mean, what kid complains about having pizza for dinner, right?
Anyhoo, with 5 of us, one little round pizza doesn't cut it anymore. So I either make a big old rectagular pizza or two little round jobbies. And in addition to a plain pepperoni (guaranteed to satisfy the most enthusiastic whiner), I love, love, love BBQ chicken & pineapple pizza.
I start with some chicken breasts, which I bake. As I mentioned with my chicken chimichangas, anything to reduce the whine factor with the kids is a plus. Baking eliminates whining from any brown/hard parts when browning.
Then I use my crinkle cutter from Pampered Chef to chop the chicken. Seriously, they sell this as a decorative tool but it works wonders cutting tons of things in the kitchen. I even use it to quickly but the food on my kids' plates into bite-sized pieces. It's a wonder tool.
I used ready-to-bake crusts this time, so no prep work there. Except when the directions said to brush olive oil on the crust before adding toppings.
But they make this great olive oil spray that seems a whole lot simpler to me and still gets the job done.
And the non-negotiable part of the recipe: Sweet Baby Ray's. I love this stuff. It totally makes the pizza.
Just squirt some on...
Then spread it around.
Add your chunked chicken and some fresh pineapple chunks.
The top it with some cheese (I prefer cheddar for this recipe) and bake according to directions on dough. Yum and enjoy!

ReplyDeleteLOL... heck, my cats whine so much when they are hungry I want to run away screaming...I'm sure kids can be a bit worse, so I can't blame you. The good thing is, you don't run away screaming! The pizza sounds wonderful!
