Today is a day to celebrate our risen Lord and savior! I hope you have indeed enjoyed a blessed day among your family nag friends celebrating God's most precious gift!
While we were celebrating today, we had a tasty little bunny for dessert:

My mom learned how to bake this cake from her mom, my Grandma Wolgamott. Do you remember my chocolate cut out cookies? Yum! Then my mom taught me how to make this cute little bunny using 2 round cake pans and these:

We opted for funfetti cake because I thought the kids would think it was fun. White, strawberry or lemon cake would be equally fabulous for Easter or any other spring occasion.
Bake your cakes as normal and let them cool. Then turn them out of their pans and let them cool completely.
Once they are cool, level one of the cakes and turn it bottom side up. This will make his ears and bow tie. I don't normally bother leveling the second cake because I like the rounded look on the face of the rabbit. Then, cut the leveled cake into three pieces, like this:

Then, I cut the middle middle piece into 2 equal sized triangles for a bow tie.
I positioned mine onto my large cutting board for a base to make the bunny.

Ice the bunny and his ears white.

Grandma covered her bunny cakes in coconut...but my kids refuse to eat it, and my mom is no longer allowed to eat it either, because of her dietary restrictions. So feel free to add coconut if you like or want to!
You can make the bow tie whatever color you want...we opted for pink/strawberry because we wanted to make his ears and mouth pink, too.

Just freehand on a face. We used 2 pink, heart-shaped marshmallows to make his nose and for the middle of his bow tie. And we added some white polka dots to the bow tie.
