In the Kitchen: Macaroni & 4 Cheeses

What kid doesn't love mac & cheese? Mine sure do! This is a perfect recipe for a Sunday afternoon or late dinner if you happen to get home in the afternoon because it only takes 2-3 hours even though it's made in the crockpot.

Yep, this is the 6th recipe in my 10-part In the Kitchen series with Gooseberry Patch & the Real Farmwives of America. I'm working my way through their Slow-Cooker Recipes cookbook (thank to receiving a complimentary copy from GP!). Here's what you'll need for Macaroni & 4 Cheeses:


3 cups of cooked elbow macaroni
1 tbsp melted margarine
2 cups evaporated milk
3/4 cup shredded cheddar cheese
3/4  cup shredded Colby Jack or Monterey Jack cheese (I used a blend of the 2)
3/4 cup shredded Gruyere or Swiss cheese
(we are apparently too backwoods here to have either in the store, but we are THE home of Baby Swiss cheese, so I shredded my own)
3/4 cup pasteurized process cheese spread, cubed (aka Velveeta)
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1 tsp seasoned salt
(I don't sell it or anything, but if you haven't tried Tastefully Simple's seasoned salt, your life is much sadder than it has to be. Just sayin'.)
1/4 tsp pepper

Combine the macaroni & margarine in a lightly greased slow cooker.


Add the remaining ingredients.


Mix well. Cover & cook on high for 2-3 hours.

Stir once or twice during cooking. My kids gobbled it up so fast I never stood a prayer of taking a picture of the finished product - but it was good, trust me!
