Here's my final of 10 Slow Cooker recipes from Gooseberry Patch's Slow Cooker Recipes cookbook:
White Bean Chicken Chili is a fabulously simple way to warm up these cool evenings without having the same old chili you always have. Here's what you'll need:
2 tablespoons of oil
1 onion, chopped
2 cloves of garlic, minced
1 pound cooked chicken, diced
2 14.5 ounce cans of diced tomatoes
16 ounce can Great Northern beans, drained and rinsed
10 ounce can tomatoes with chiles
1.5 cups water
2 cubes chicken bouillon
1/2 teaspoon dried oregano
1/2 teaspoon coriander
1/4 teaspoon ground cumin
salt and pepper to taste
Optional garnishes: sour cream, shredded cheddar cheese, sliced black olives, diced avocado, tortilla chips
Start by eating the oil in a skillet over medium heat and cooking the onion and garlic until soft.
Now it was actually the second time I made this that I remembered to take pictures...the first time I made a batch for the teachers at Sissy's school to enjoy during parent-teacher conferences...and during that first batch, I doubled the chicken when I cooked and diced it along with the onion and garlic since I knew I wanted to make a batch for us to enjoy as well. Then, I froze half of that batch. So here it it, going into the crock pot.
Next, add the remaining ingredients (except for the garnish). Here go the tomatoes...

And the spices....
Then give it a stir, cover and let cook on low for about 4 hours...maybe a little longer if you added frozen ingredients like me. My crock pot has a timer that switches to warm, so it was fine when I got home.
Ta da! Ready to go when you come home from the cold. We enjoyed ours with a fresh loaf of beer bread after Sissy's basketball practice. Yum!
